Ingredients
- Pizza dough1 ball (400g)
- Baking soda3 tbsp
- Melted butter2 tbsp
- Coarse salt1 tbsp
- Egg1
Method
Roll and cut
Roll the dough into long ropes about an inch thick, then slice into bite-sized pieces. Keeping them uniform means they puff at the same rate.
Baking soda bath
Dissolve the baking soda in warm water and dunk each piece for thirty seconds. This alkaline soak is what gives pretzels their unmistakable chew and colour.
Egg wash
Lift the bites out, pat off the drips, and brush them with beaten egg. The wash helps the salt stick and deepens the golden sheen.
Salt the tops
Sprinkle coarse salt over the glazed bites while still tacky. Press lightly so the crystals settle in rather than rolling off.
Space in basket
Arrange the bites with room to expand, since they will swell as they bake. Crowding leads to soft, pale sides instead of an all-over crust.
Air-fry and butter
Air-fry at 180C for 9 minutes until deep brown and puffed, then brush the hot bites with melted butter. Serve warm with mustard.
