Ingredients

  • Plain flour1 cup
  • Dashi stock1.25 cups
  • Egg1, beaten
  • Cabbage1/2 cup, minced
  • Spring onion2 stalks
  • Pickled ginger1 tbsp

Method

  1. Whisk the batter

Whisk the flour, dashi stock and beaten egg into a smooth, thin batter with no lumps. Let it rest for ten minutes so the flour fully soaks up the liquid, which gives the finished balls a soft, tender crumb.

  2. Fold in fillings

Stir the minced cabbage, spring onion and pickled ginger through the rested batter. These bring the savoury bite and little pockets of texture inside each ball, so every mouthful is not just plain batter.

  3. Fill the moulds

Spoon the batter into a greased silicone half-sphere or takoyaki mould that fits your basket. Grease it well and fill almost to the top, since the batter rises as it sets and you want full, rounded balls.

  4. Set then turn

Cook until the tops are just set, then carefully roll or flip each ball over in its mould. Turning them is what shapes the classic round spheres and browns the batter evenly on every side.

  5. Air-fry to golden

Air-fry at 180°C for 14 min, until the shells are firm and golden and the batter inside is cooked through, even though the centres stay soft and moist. The set outside holds the tender middle together.
