Ingredients
- Eggs, boiled & halved4
- Gram flour (besan)1 cup
- Rice flour2 tbsp
- Red chilli & ajwain1 tsp
- Asafoetida & saltto taste
- Wateras needed
Method
Whisk the batter
Mix the gram flour, rice flour, red chilli, ajwain, asafoetida and salt with enough water to make a thick coating batter. It should cling to a spoon, not run off, so the egg gets a proper jacket.
Dry the eggs
Pat the boiled egg halves dry with a towel before you coat them. Any surface moisture makes the batter slide off and cook unevenly, leaving bare, pale patches on the egg.
Coat thickly
Dip each egg half into the batter until it is fully covered, cut-side included. Let the extra batter drip away so you avoid thick, gummy patches that stay soft and raw in the middle.
Rest the coating
Spray the basket and the battered eggs lightly with oil and let them sit for a minute. This short rest lets the batter firm up so it holds its shape when it meets the heat.
Air-fry until golden
Cook at 190°C for 13 min, turning once, until the besan crust is crisp, deep gold and hot right through. Serve them hot while the crust is still at its crispest.
