Ingredients
- Puff pastry sheet1
- Grated cheddar3/4 cup
- Egg, beaten1
- Cayenne pepper1/4 tsp
- Sesame seeds1 tbsp
Method
Roll and brush
Roll the thawed puff pastry into a neat rectangle on a lightly floured surface, then brush the top with beaten egg. The egg helps the cheese stick and bakes into a glossy golden finish on the twists.
Add cheese
Scatter the grated cheddar and cayenne evenly over half the sheet, then fold the bare half over to trap the filling. Press it down gently and roll once more so the layers seal and the cheese stays put.
Cut and twist
Slice the pastry into finger-width strips, then twist each one a few times into a spiral. Press the ends down onto the basket liner so the twists hold their shape and do not unwind as they puff.
Top
Brush the twists with the last of the beaten egg and sprinkle over the sesame seeds. The seeds toast in the heat and add a nutty crunch, while the egg gives them something to cling to.
Air-fry
Lay the twists in a single layer with space between them and air-fry at 180C for 12 min until puffed, deep golden and crisp. Cool them on a rack so air moves underneath and the layers stay flaky, not soggy.
