Ingredients
- Eggs6
- Mayonnaise2 tbsp
- Mustard & chaat masala1 tsp
- Green chilli & coriander1 tbsp
- Paprika, to dust1/4 tsp
- Salt & pepperto taste
Method
Hard-boil and cool
Boil the eggs for ten minutes, then cool them in cold water before peeling. Fully cooled eggs slice neatly and the yolks pop out without crumbling.
Make the filling
Halve the eggs, scoop the yolks into a bowl and mash them with mayonnaise, mustard, chaat masala, chilli, coriander, salt and pepper. Beat until smooth and creamy with no lumps.
Fill the whites
Spoon or pipe the yolk mixture back into the hollows of the egg whites, mounding it slightly. Piping gives a neater look but a spoon works just as well.
Dust the tops
Sprinkle a little paprika over each filled half for colour and a gentle smoky note. This also helps the surface take on a faint golden tinge in the heat.
Warm in the air fryer
Set the eggs upright in the basket and cook at 160C for 6 minutes until the filling is just warmed and lightly set on top. Serve warm or chill them again for a cold platter.
