Ingredients
- flour1 cup
- egg1
- milk1/2 cup
- sugar1/4 cup
- baking powder1 tsp
- chocolate chips1/3 cup
- butter2 tbsp, melted
Method
Mix the batter
Whisk the egg, sugar, milk and melted butter until smooth, then fold in the flour and baking powder. Mix only until the flour disappears, as a few small lumps are fine and stop the muffins turning rubbery.
Add chocolate chips
Stir most of the chocolate chips through the batter, keeping a few aside to press on top. Tossing the chips in a little flour first stops them sinking, so every muffin has chips all the way through.
Fill the cups
Spoon the batter into paper muffin cups, filling each about two-thirds full, then dot the reserved chips on top. Leaving room at the top gives the muffins space to rise into a nice domed shape.
Air fry
Air fry at 170°C for 14 min until the muffins are risen and springy and a skewer pushed into the centre comes out clean. A clean skewer tells you the middle is cooked through and not still wet.
