Ingredients
- Minced chicken300 g
- Maida (all-purpose flour)1.5 cups
- Finely chopped onion1 medium
- Garlic and ginger paste1.5 tbsp
- Crushed black pepper1 tsp
- Coriander leaves3 tbsp
Method
Prepare the dough
Combine maida, salt and warm water into a firm yet supple dough, kneading for a few minutes until smooth. Wrap and rest it for twenty minutes so it rolls out paper-thin without cracking.
Mix the chicken filling
Combine minced chicken with onion, garlic-ginger paste, crushed pepper, coriander, salt and a drizzle of oil. Mix well in one direction until slightly sticky, which keeps the filling moist and bound once cooked.
Fill and pleat
Roll thin three-inch discs and place a heaped teaspoon of the raw chicken mix in the centre. Gather and pleat the edges tightly into a sealed potli, ensuring no gaps so the juices stay locked inside.
Steam until cooked
Steam the momos for about eight minutes until the chicken is fully cooked and firm to the touch. This step is essential for poultry, since the air fryer afterwards only browns the surface.
Crisp in the air fryer
Lightly brush the steamed momos with oil and lay them out without crowding. Air-fry at 180C for 10 minutes, turning once, until the wrappers are blistered, golden and lightly crunchy. Check one momo: the filling should be steaming hot with no pink in the minced chicken.
