Ingredients
- Frozen pork dumplings12 pieces
- Sesame oil2 tsp
- Soy sauce2 tbsp
- Rice vinegar1 tbsp
- Chilli crisp1 tsp
Method
Brush with sesame oil
Toss the frozen dumplings with the sesame oil so each one is lightly slicked. The oil promotes that signature crackly, golden potsticker base in the dry heat of the air fryer.
Arrange seam up
Set the dumplings in the basket with the pleated seam pointing up and the flat bottoms down. This keeps the seam from splitting and lets the bottoms crisp directly against the basket.
Mid-cook spritz
Mix the soy sauce, rice vinegar and chilli crisp in a small bowl for dipping while the dumplings cook. A light spritz of water on the dumplings halfway through keeps the wrappers from drying and cracking.
Air-fry to a crisp base
Air-fry at 190C for 13 minutes, with no need to flip. They are ready when the bottoms are lacy-brown and crisp and the filling is steaming through; serve hot with the soy-vinegar-chilli sauce. The pork is done when it is cooked through with no pink in the centre.
