Ingredients
- Frozen chicken taquitos8 pieces
- Avocado oil spray1 tsp
- Chilli powder1/4 tsp
- Lime wedges2
- Sour cream dip1/3 cup
Method
Brush off ice
Tap the frozen taquitos gently to knock off any frost crystals before they go in. Melting ice turns to steam in a hot basket, and that steam softens the tortilla, so a dry surface is what lets the shell turn crackly instead of chewy.
Oil for blistering
Spray each taquito with a light, even coat of avocado oil and dust with chilli powder. That thin film of oil is what blisters the tortilla and gives it a proper fried taste, while dry heat alone would leave it pale and papery.
Seam side down
Lay the taquitos in the basket with the rolled seam facing down so they cannot unravel as they heat. Leave a finger-width gap between each one, because packed rolls trap steam and brown unevenly on the sides that touch.
Air-fry until blistered
Air-fry at 200C for 12 min, rolling them a quarter turn halfway so every side crisps. They are ready when the shells are crackly and lightly charred at the edges and the chicken inside is opaque with no pink at the centre. Squeeze over lime and serve with sour cream.
