Ingredients
- Halloumi, cubed250 g
- Cornflour2 tbsp
- Olive oil1 tbsp
- Honey1 tbsp
- Chilli flakes1/2 tsp
- Dried oregano1/2 tsp
Method
Dry the cheese
Pat the halloumi cubes thoroughly dry with kitchen paper. Removing the surface moisture is essential for a crisp golden exterior rather than a soft, sweaty one that never colours properly.
Dust lightly
Toss the cubes with the cornflour and a little olive oil until each piece wears a thin, even film. The cornflour dries the surface and crisps in the heat to give the bites a light, crackly crust.
Season
Sprinkle over the dried oregano and mix gently so the herb clings to the cornflour coating. Hold the honey and chilli flakes back for now, since sugar added too early would scorch in the heat.
Arrange spaced out
Lay the cubes in a single layer with clear gaps between them so the hot air can reach and crisp every face. Crowding traps steam and leaves the halloumi soft and pale instead of golden.
Air-fry
Air fry at 200°C for 8 min, turning halfway, until the cubes are deep golden with crisp edges. Mix the honey with the chilli flakes, drizzle it over at once and toss to glaze while the bites are hot.
