Ingredients
- Paneer cubes250 g
- BBQ sauce3 tbsp
- Bell peppers1 cup
- Honey1 tbsp
- Smoked paprika1 tsp
- Oil1 tbsp
Method
Mix the BBQ glaze
Stir the BBQ sauce, honey, smoked paprika and oil into a glossy glaze. The sugar in the honey helps the paneer brown and caramelise, giving a sticky, glazed finish once it meets the heat.
Coat and thread
Fold the paneer cubes and chunked bell peppers through the glaze until well coated, holding back a little glaze for later. Thread them alternately onto soaked wooden skewers so they do not scorch.
Rest the skewers
Let the glazed skewers sit for 10 minutes so the smoky flavour settles in. Brush a little oil over the basket first, as the sugary glaze can stick and tear the paneer when you turn it.
Air-fry to a sticky char
Air-fry at 200°C for 13 min, turning once and brushing with the saved glaze halfway. Glazing late keeps the sugar from burning too soon. They are ready when the edges char and the glaze looks sticky and glossy.
