Ingredients
- Large cauliflower1 whole head
- Butter3 tbsp
- Minced garlic4 cloves
- Smoked paprika1 tsp
- Fresh parsley2 tbsp
- Olive oil2 tbsp
Method
Cut the steaks
Stand the cauliflower stem-down and slice through the centre into two thick slabs about two centimetres each, keeping the core intact so they hold together. Save the loose florets for another dish.
Season the slabs
Brush both sides of each steak with olive oil and dust evenly with smoked paprika, salt and pepper. Press the seasoning in gently so it adheres to the surface.
Make garlic butter
Gently melt the butter with the minced garlic until just fragrant, taking care not to brown the garlic. Stir in the chopped parsley off the heat.
First side
Lay the steaks flat in the basket without overlapping. Cook the first side until the edges begin to caramelise and turn deep gold.
Butter and finish
Air-fry at 190C for a total of 18 minutes, flipping at the halfway mark and brushing the garlic herb butter over both sides in the final 5 minutes so it soaks in and glazes the surface.
