Ingredients

  • bread4 slices, cubed
  • onion1/2 cup, chopped
  • mustard seeds1/2 tsp
  • curry leaves8
  • green chilli1, chopped
  • turmeric1/4 tsp
  • lemon juice1 tsp
  • oil1 tbsp

Method

  1. Cube the bread

Cut the bread into small, even cubes and toss them with one teaspoon of the oil. A light coat of oil helps every cube brown and turn crisp, and slightly stale bread holds its shape better than very fresh slices.

  2. Build the masala

In an air-fryer-safe dish, toss the chopped onion, mustard seeds, curry leaves, green chilli and turmeric with the rest of the oil. Spreading them in the oil first lets the spices bloom and coat everything with even flavour.

  3. Combine and layer

Add the bread cubes to the dish and toss well so every piece is coated with the masala and turns bright yellow. Spread them out in a single layer so the hot air can reach each cube and crisp it.

  4. Air fry until crisp

Air fry at 180°C for 10 min, tossing once halfway, until the bread cubes are golden and crisp at the edges and the onion has softened. Finish with a squeeze of lemon juice to lift the flavour.
