Ingredients

  • banana1 large, mashed
  • flour3/4 cup
  • milk1/3 cup
  • baking powder1 tsp
  • sugar1 tbsp

Method

  1. Mash the banana

Mash the banana in a bowl until it is smooth with no big lumps left. A ripe, well-mashed banana blends into the batter evenly, so you get soft bites without stringy pieces running through them.

  2. Mix the batter

Stir in the flour, baking powder, sugar, and milk until you have a thick but pourable batter. Mix just until it comes together, because over-beating develops the flour and makes the bites tough.

  3. Fill the mould

Spoon the batter into a greased silicone mini muffin mould, filling each cup about two-thirds full. Leaving that gap gives the baking powder room to lift the bites into a light dome.

  4. Air fry

Air-fry at 170°C for 12 min until a skewer pushed into the centre of a bite comes out clean. Let them cool for a minute in the mould so they firm up before you lift them out.
