Ingredients

  • minced lamb400 g
  • onion1 small
  • garlic2 cloves
  • cumin powder1 tsp
  • paprika1 tsp
  • salt1 tsp

Method

  1. Mix

Grate the onion and squeeze out the water, then mix it with the lamb, grated garlic, cumin, paprika and salt. Removing the onion water keeps the mix firm, so the patties hold together and do not fall apart in the basket.

  2. Knead

Knead the mince well until it feels firm and slightly sticky. This kneading works the meat so it binds into a tight patty that holds its shape and stays juicy rather than crumbling as it cooks.

  3. Shape

Divide the mix into 6 balls and flatten each into an even patty about 1.5 cm thick. Keeping them the same thickness means they all cook through at the same rate, so none stays raw while others overcook.

  4. Rest

Chill the patties for 10 minutes so they set before cooking. A short rest in the fridge firms up the fat and mince, which helps the patties keep their shape and brown neatly instead of spreading out.

  5. Air fry

Cook at 190°C for 16 min, turning once halfway so both sides brown. The patties are done when the outside is browned and the centre is no longer pink at 74°C, with clear juices when pressed.
