Ingredients
- mutton600 g chops
- yogurt1/4 cup
- ginger garlic paste1.5 tbsp
- red chilli powder2 tsp
- coriander powder1.5 tsp
- carom seeds1/2 tsp
- mustard oil2 tbsp
Method
Mix the dry rub
In a bowl, mix the yogurt, ginger garlic paste, red chilli powder, coriander powder, carom seeds, mustard oil and salt into a thick, clinging paste. The yogurt and mustard oil carry the spices deep into the meat while keeping it moist.
Marinate the chops
Rub the paste all over the mutton chops, pressing it well into the meat and into any folds. Cover and rest them in the fridge for at least 3 hours, or longer if you can, so the marinade softens the tough cut and flavours it through.
Preheat and arrange
Preheat the air fryer to 190°C so the basket is hot before the meat goes in. Place the chops in a single layer with space between them, as the gaps let hot air reach every side and help the surface brown rather than steam.
Air fry in stages
Cook the chops at 190°C for 12 minutes, then flip them and cook for a further 12 minutes on the other side. Turning them halfway lets both faces brown deeply and cook at the same rate for an even finish.
Rest and check doneness
Air-fry the chops for a total of 24 min at 190°C, then let them rest for 2 min before serving so the juices settle back in. They are done when the meat is tender, no pink remains near the bone and the juices run clear.
