Ingredients

  • banana flower300 g
  • potato2 medium
  • coconut3 tbsp grated
  • green chilli2
  • cornflour3 tbsp
  • breadcrumbs1 cup

Method

  1. Cook the filling

Clean the banana flower and chop it small, then boil until it turns soft. Squeeze out every drop of water in your fists and chop it fine. A dry filling is what stops the chops turning soggy and falling apart while they cook.

  2. Make the mix

Mix the banana flower with mashed potato, grated coconut, chopped green chilli and salt. Mash while the potato is still warm so it binds smoothly, then shape into small even croquettes that cook through at the same rate.

  3. Coat

Whisk the cornflour with a little water into a thin slurry. Dip each croquette, then roll it in breadcrumbs, pressing gently so they cling. This coating gives a crisp shell that browns evenly instead of a bare, patchy crust.

  4. Rest and spray

Chill the coated croquettes for 10 minutes so the crust firms up and holds its shape, then mist all over with oil. A thin, even film of oil is what turns the breadcrumbs deep golden instead of dry and pale.

  5. Air fry

Air fry at 180°C for 12 min, turning once halfway, until the crust is golden and crisp and the chops are heated right through. Turning gives both sides equal contact with the hot air so they colour evenly.
