Ingredients
- Minced lamb (20% fat)500 g
- Ginger-garlic paste2 tbsp
- Green chillies, minced3
- Garam masala1.5 tsp
- Fresh coriander, chopped1/2 cup
- Gram flour, toasted2 tbsp
Method
Bind the mince
Knead the lamb with ginger-garlic paste, chillies, garam masala, coriander and toasted gram flour until it feels tacky and holds together. Work it for a full three minutes so the proteins tighten and the kebabs won't crumble.
Rest cold
Cover the bowl and chill for at least 30 minutes. The cold firms up the fat and makes shaping around skewers far easier.
Shape on skewers
Wet your palms and press portions of mince into long fingers around flat metal or soaked bamboo skewers. Keep the thickness even so they cook through at the same rate.
Oil and preheat
Brush each kebab lightly with oil for browning. Preheat the air fryer so the surface sears on contact rather than steaming.
Air-fry to char
Lay the skewers in a single layer and air-fry at 200C for 14 minutes, turning once at the halfway mark. They are ready when the edges are deeply browned and the juices run clear.
