Ingredients
- Chicken thigh500 g, cubed
- Cornstarch5 tbsp
- Soy sauce3 tbsp
- Honey2 tbsp
- Toasted sesame oil1 tsp
- Sesame seeds2 tbsp
Method
Coat the chicken
Pat the cubed thigh dry, then toss it thoroughly in the cornstarch with a pinch of salt. A dry surface and an even dusting are the keys to a crackly, crisp crust rather than a gummy one.
Make the sauce
Stir the soy sauce, honey and toasted sesame oil together until smooth and glossy. Keep it ready in a wide bowl so you can toss the chicken the moment it comes out crisp.
Mist and arrange
Spray the coated cubes with oil and lay them spaced out in the basket. Giving each piece room lets the hot air crisp all sides instead of steaming them together into a soft clump.
Toss in glaze
Tip the hot chicken into the sauce bowl and fold until every cube is coated. Sprinkle the sesame seeds over and toss again so they stick to the sticky glaze.
Air-fry until crisp
Air-fry at 200C for 16 min, shaking halfway through for even browning. The cubes should be deep gold before they meet the glaze. The chicken is done when it is opaque all the way through with no pink at the centre.
