Ingredients
- Mutton cubes450 g
- Bell peppers, chunked2
- Onion, in petals1
- Soy-vinegar mix3 tbsp
- Black pepper, crushed1 tsp
- Paprika1.5 tsp
Method
Marinate the mutton
Toss the mutton cubes in the soy-vinegar mix, crushed black pepper and paprika, then leave them for 2 hours. The vinegar helps soften the meat while the spices build a deep, tangy flavour.
Prep the veg
Cut the bell peppers and onion into chunks roughly the same size as the meat. Matching the sizes keeps the meat and vegetables cooking at the same pace so nothing burns or stays raw.
Thread skewers
Alternate mutton, pepper and onion along each skewer. Pack them snugly but leave a little gap between pieces so hot air can move around and cook every side evenly.
Oil lightly
Brush the assembled skewers all over with a thin film of oil. This stops the vegetables from drying out and helps everything take on an even, golden colour.
Air-fry the skewers
Cook at 195C for 18 min, turning twice for even colour. They are ready when the mutton is tender and the pepper edges lightly charred, cooked through with no pink in the centre.
