Ingredients
- Chicken breast cubes500 g
- Cajun seasoning2 tbsp
- Smoked paprika1 tsp
- Olive oil2 tbsp
- Cornstarch2 tbsp
- Garlic powder1 tsp
Method
Cube evenly
Cut the chicken into uniform bite-sized pieces so they cook at the same rate. Even cubes give you a consistent crust and prevent some bites drying out before others are done.
Season generously
Toss the cubes with Cajun seasoning, smoked paprika, garlic powder and olive oil until fully coated. Let them sit ten minutes so the spices bloom into the surface of the meat.
Dust with cornstarch
Sprinkle the cornstarch over the seasoned cubes and toss again. This thin layer crisps into a light shell that locks in the juices during the quick cook.
Spread for airflow
Arrange the bites in a single layer with a little space between them. Overlapping pieces steam instead of crisping and lose that signature peppery crackle.
Air-fry until charred
Air-fry at 200C for 12 minutes, shaking the basket halfway, until the edges are browned and the centers are juicy. Let them rest briefly so the crust firms before serving. The chicken is done when it is opaque all the way through with no pink at the centre.
