Ingredients

  • Lean ground turkey350 g
  • Egg1
  • Oats flour3 tbsp
  • Italian herbs1 tsp
  • Garlic powder1 tsp

Method

  1. Combine the mixture

Mix the ground turkey with the egg, oats flour, Italian herbs and garlic powder until it just comes together. Stop as soon as it holds, because working the meat too much squeezes it tight and turns the finished balls dense and tough.

  2. Roll the balls

With slightly damp hands, roll the mixture into even, walnut-sized balls. Wet hands stop the sticky mix clinging to your palms, and keeping every ball the same size means they all cook through at the same rate.

  3. Chill briefly

Rest the rolled balls in the fridge for 10 minutes so they firm up before cooking. A short chill helps the lean mixture hold its round shape in the basket rather than slumping or flattening once the heat hits.

  4. Air-fry the meatballs

Arrange the balls apart and air-fry at 190°C for 14 min, turning them once halfway so they brown all over. They are ready when the outside is golden and the centre is no longer pink when you cut one open.
