Ingredients
- cauliflower1 medium head
- cornflour3 tbsp
- honey2 tbsp
- chilli sauce1 tbsp
- garlic4 cloves
- sesame seeds1 tsp
Method
Cut florets
Break the cauliflower into small bite-sized florets, all roughly the same size, and pat them fully dry. Even pieces crisp at one pace, and dry surfaces let the cornflour grip instead of turning to paste.
Dry coat
Toss the florets with the cornflour and minced garlic until each piece wears a thin, even dusting. A light dry coat is what forms the crackly shell, so shake off any thick clumps before they cook.
First fry
Mist the coated florets with a little oil and air fry at 190°C for 12 minutes, shaking once. Spreading them in a single layer lets the hot air dry each face into a crisp, light-gold crust.
Make glaze
Warm the honey and chilli sauce together until just loose, then toss the hot florets through it with the sesame seeds. Coating them straight from the basket helps the glaze cling before the shell can soften.
Crisp again
Return the glazed florets to the air fryer at 190°C for 6 min until the coat is sticky, crisp and deep golden. This quick second blast sets the honey onto the crust so it stays glossy rather than wet.
