Ingredients

  • fish2 fillets (150 g each, boneless)
  • bread crumbs1/2 cup
  • egg1 (beaten)
  • lemon juice1 tbsp
  • black pepper1/2 tsp
  • burger bun2
  • lettuce2 leaves
  • mayonnaise3 tbsp

Method

  1. Marinate the fish

Pat the fish fillets thoroughly dry, as surface water stops the coating sticking later. Rub them with lemon juice, black pepper and salt, then rest for 10 min so the flavours soak into the flesh.

  2. Coat the fillets

Dip each fillet in the beaten egg, then press it into the bread crumbs to coat all over. Pressing gently locks the crumbs on so they form an even shell that crisps up golden instead of falling away.

  3. Air fry the fish

Place the fillets in the basket in a single layer with space around them. Air fry at 190°C for 12 min, flipping halfway, so both sides turn golden and crisp and the coating cooks through evenly.

  4. Assemble the burger

Check the fish is opaque and flakes easily with a fork, the sign it is cooked through. Toast the split buns at 190°C for 2 min, then build the burger with mayonnaise, lettuce and the fish. Serve hot.
