Method
Beat the eggs
Whisk the eggs with the chopped onion, green chili, chili powder and coriander until well mixed. Beat in a little air so the cooked egg sheet stays soft and folds without cracking apart.
Set the egg
Pour the egg into a lined air fryer tin so it cooks into an even sheet. Air fry at 180°C for 9 minutes until the egg is fully set with no runny centre, then lift the sheet out gently.
Roll
Lay the set egg sheet on a warm paratha and scatter over some extra onion. Roll it into a firm cylinder and set it seam-side down so it holds together and does not spring open.
Crisp and serve
Air fry the roll at 180°C for 5 min until the paratha is golden and crisp and the egg is hot through. Starting it seam-side down seals the roll shut before the paratha firms up.
