Ingredients
- egg4 boiled
- potato3 medium
- onion1 small
- green chilli2
- ginger1 inch
- egg1 for coating
- breadcrumbs1 cup
Method
Make the casing
Boil and mash the potato, then mix it with the chopped onion, ginger, green chilli and salt into a firm dough. Keep the mash dry and stiff so it wraps around the eggs neatly without sliding off.
Wrap the eggs
Halve the boiled eggs, then press the potato casing around each half until it is fully covered, and shape it into a smooth oval. A complete, crack-free cover stops the coating splitting open while cooking.
Coat
Dip each oval in the beaten egg, then press it into the breadcrumbs for a full, even coat, and mist with oil. The egg helps the crumbs stick, and the oil turns them into a crisp golden shell.
Chill
Rest the coated devils in the fridge for 10 minutes so they firm up. A cold, set coating holds its shape in the basket and crisps cleanly instead of loosening and sliding off the potato.
Air fry
Air fry at 180°C for 12 min, turning once, until the crust is golden and crisp and the eggs are heated right through to the centre. A piping-hot centre means they are safely warmed through.
