Ingredients
- Eggs (for boiling)4
- Pork or chicken sausage meat300 g
- Breadcrumbs1 cup
- Egg (for coating)1, beaten
- Smoked paprika1 tsp
- Oil sprayas needed
Method
Soft-boil the eggs
Lower four eggs into gently boiling water and cook for exactly six minutes for a jammy centre. Plunge them into ice water and peel carefully so the whites stay intact.
Wrap in sausage
Season the sausage meat with smoked paprika and a pinch of salt, then divide into four portions. Flatten each into a patty on your palm and mould it evenly around a peeled egg, sealing all seams.
Crumb each egg
Roll every wrapped egg first in beaten egg, then press firmly into breadcrumbs until fully coated. A double dip on any thin patches gives a sturdier crust.
Chill briefly
Rest the crumbed eggs in the fridge for ten minutes so the coating sets and clings during cooking. Lightly mist them all over with oil spray just before frying.
Air-fry until golden
Arrange the eggs in the basket without touching and cook at 190C for 14 minutes, turning halfway. They are ready when the crust is deep golden and the sausage reads 74°C inside with no pink and the juices run clear.
