Ingredients
- Hot dog sausages6
- Cornmeal3/4 cup
- Plain flour3/4 cup
- Buttermilk1 cup
- Sugar2 tbsp
- Wooden skewers6
Method
Skewer and dry
Push a skewer lengthways into each sausage, leaving a handle to hold. Pat the sausages dry and dust them lightly with flour so the batter has something to grip.
Mix the batter
Whisk the cornmeal, flour and sugar, then pour in buttermilk until you have a thick batter that ribbons off the spoon. Tip it into a tall glass for easy dipping.
Coat each dog
Dunk a floured sausage into the glass, twirling it so the batter wraps the whole length evenly. Let the excess drip off for a second before lifting it out.
Chill briefly
Rest the coated dogs on parchment for a few minutes so the batter firms up. This stops it sliding off in the hot basket.
Arrange to fry
Lay the corn dogs in the basket without touching and mist them with oil. Spacing matters so each one browns rather than steams.
Air-fry until golden
Air-fry at 190C for 14 minutes, turning once gently with tongs. They are done when the crust is firm, golden and crisp to the tap. Make sure it is cooked through with no pink before serving.
