Ingredients
- Shredded cooked chicken2 cups
- Corn tortillas10
- Grated Monterey Jack1 cup
- Taco seasoning1.5 tbsp
- Cream cheese3 tbsp
- Oil sprayfor brushing
Method
Build the filling
In a bowl, fold the shredded chicken together with softened cream cheese, taco seasoning and the grated Monterey Jack. Mash until everything clings into a cohesive, spoonable mixture that won't fall apart when rolled.
Soften the tortillas
Warm the corn tortillas in a dry pan or microwave for about 20 seconds so they turn pliable. Cold tortillas crack and tear, so this step is what lets you roll them tightly without splitting.
Roll them tight
Spoon a thin line of filling along one edge of each tortilla and roll it up snugly into a cigar shape. Place each one seam-side down so it stays sealed and doesn't unravel during cooking.
Brush and arrange
Lightly mist or brush each roll with oil so it crisps evenly to a deep gold. Set them seam-side down in the basket in a single layer with a little gap between each.
Air-fry to crisp
Cook at 200C for 10 minutes, flipping halfway, until the shells are blistered and crunchy and the cheese oozes at the ends. The chicken is done when it is opaque all the way through with no pink at the centre.
