Ingredients
- basa fillet4, about 150 g each
- breadcrumbs6 tbsp
- lemon1, zest and juice
- garlic3 cloves, minced
- parsley3 tbsp, chopped
- olive oil3 tbsp
- mustard1 tbsp
Method
Prep the fish
Pat the fillets dry and season with salt, pepper and a squeeze of lemon juice. Brush the tops lightly with mustard. Drying the fish first stops it steaming, and the mustard acts like glue so the crust grips.
Make the crust
Mix the breadcrumbs with the lemon zest, garlic, parsley and olive oil until the crumbs feel evenly moist. The oil-dampened crumbs press together well and toast into a crisp, golden layer instead of blowing off in the fan.
Coat
Press the crumb mixture firmly onto the mustard-brushed side of each fillet in an even layer. Packing it down means the crust stays put and browns uniformly rather than sliding off during cooking.
Air fry
Air fry at 190°C for 12 min until the crust is crisp and deep golden, and the fish underneath turns opaque and flakes easily with a fork. Flaking cleanly is the sign it is cooked all the way through.
