Ingredients
- french beans300 g, trimmed
- garlic4 cloves, sliced
- red chilli flakes1 tsp
- olive oil1.5 tbsp
- salt1/2 tsp
Method
Trim the beans
Trim the ends off the beans and dry them well with a cloth. Any water on the surface turns to steam in the basket and softens them, so dry beans are what let them roast and blister instead of going limp.
Season
Toss the beans with the sliced garlic, chilli flakes, oil and salt until evenly coated. The thin film of oil helps the heat blister the skins and lets the garlic toast and stick to the beans.
Single layer
Spread the beans in a single layer so the hot air can reach every side. Piled-up beans trap steam and stay soft, while a spread-out layer lets the skins dry out and blister into a light char.
Preheat
Preheat the air fryer at 185°C for 3 minutes. A hot basket starts blistering the beans the second they go in, so they roast quickly and stay crisp rather than slowly softening in a cool basket.
Roast
Air fry at 185°C for 11 min, shaking twice, until the beans are blistered and just crisp. Shaking spreads them out again so they colour evenly and no side steams flat against another bean.
