Ingredients

  • capsicum3 small, halved
  • cheese100 g
  • corn2 tbsp, boiled
  • onion2 tbsp, chopped
  • chilli flakes1/2 tsp

Method

  1. Prepare the capsicum

Cut each capsicum in half and pull out the seeds and white ribs to make neat cups. Level cups sit steady in the basket and hold the filling without tipping, so the cheese stays inside as it melts.

  2. Mix the filling

In a bowl, mix the cheese, boiled corn, chopped onion and chilli flakes until evenly combined. Spreading the corn and onion through the cheese means every spoonful has a bit of everything and binds well.

  3. Stuff and chill

Fill each capsicum half with the cheese mixture, pressing it in gently, then freeze for 10 minutes. Chilling firms the cheese so it melts slowly and stays in the cup instead of running out too fast.

  4. Air fry

Preheat to 180°C, then air fry the stuffed capsicum at 180°C for 12 min until the cheese is melted and bubbling and the edges of the peppers are lightly charred and tender. Serve warm.
