Ingredients
- Sweet potatoes2 large
- Cornflour1 tbsp
- Oil1 tbsp
- Smoked paprika1/2 tsp
- Black pepper1/4 tsp
- Saltto taste
Method
Cut even sticks
Peel the sweet potatoes and cut them into fries no thicker than 1 cm, so the inside cooks through before the outside burns. Soak the sticks in cold water for 30 minutes to rinse away starch that would make them stick together.
Dust with cornflour
Drain and dry the fries fully, then toss them with the cornflour until lightly coated. This thin starch layer is what turns soft sweet potato into crisp fries in an air fryer, forming a shell that crackles instead of bending.
Add oil and spice
Drizzle over the oil and add the smoked paprika, black pepper and a pinch of salt, tossing gently so the coating clings without turning to clumps. Do not overcrowd the basket, or the fries will steam each other and stay soft.
Air-fry in batches
Spread the fries loosely and air-fry at 185°C for 17 min, shaking every 6 minutes so the natural sugars caramelise rather than scorch. Rest them for 2 minutes before serving, which lets the soft centres firm up so they hold.
