Ingredients
- ripe banana2, mashed
- whole wheat flour1.25 cups
- egg1
- honey3 tbsp
- butter2 tbsp, melted
- baking powder1 tsp
- chopped walnuts2 tbsp
Method
Mix Wet
Whisk the mashed banana, egg, honey and melted butter into a smooth wet mix. Use very ripe, spotty bananas, because the riper they are the sweeter and softer the loaf turns out, and mash them well so there are no big lumps.
Fold Dry
Add the flour, baking powder and walnuts and fold them in gently until you just stop seeing dry flour. Mixing too much makes the crumb tough and rubbery, so a few small lumps left in the batter are fine here.
Pour
Grease a small loaf tin that fits inside your basket and pour in the batter, smoothing the top level. A greased tin lets the loaf slip out cleanly, and a flat top bakes evenly instead of doming in the middle.
Air Fry
Air fry at 160°C for 25 min until the top is set and a skewer pushed into the centre comes out clean with no wet batter. Let it cool in the tin for 10 min before slicing, or the warm loaf will crumble.
