Ingredients
- cauliflower1 cup florets
- broccoli1 cup florets
- bell pepper1 sliced
- rice flour3 tbsp
- breadcrumbs1/2 cup
- oil2 tbsp
Method
Season the vegetables
Put the cauliflower, broccoli and bell pepper in a bowl, season with salt and pepper, and toss with 1 tablespoon of oil until evenly coated. The light oil coat helps the dry coatings stick and the pieces brown instead of drying.
Coat with rice flour
Sprinkle the rice flour over the oiled vegetables and toss well so every piece is lightly and evenly dusted. This thin flour layer soaks up surface moisture and forms the first crisp shell once it hits the hot air.
Add the crumb coating
Sprinkle the breadcrumbs over the vegetables and toss again, pressing gently so the crumbs stick to the floured, oiled surface. The crumb layer is what gives these bites their extra crunch and golden colour.
Air fry until crunchy
Arrange the pieces in a single layer in the basket. Air fry at 200°C for 12 min, shaking the basket once, until the coating is golden and crunchy. The shake stops them sticking and browns every side evenly.
