Ingredients
- Spring roll wrappers10
- Shredded cabbage and carrot2 cups
- Spring onion and capsicum1 cup
- Soy sauce and vinegar1 tbsp each
- Garlic and ginger1 tbsp
- Cornflour slurry2 tbsp
Method
Stir-fry the filling
Toss the shredded cabbage, carrot, spring onion and capsicum on high heat with garlic, ginger, soy and vinegar for about 1 min so they stay crunchy. Cool the filling fully, as warm filling turns the wrappers soggy and tears them.
Fold into parcels
Place a small spoon of filling on each wrapper, fold in the sides and roll into a neat, tight cylinder. Keep the parcels small and snug so they cook evenly into crisp, poppable bites.
Seal the edge
Brush the last flap with cornflour slurry and press firmly to glue it shut. A tight seal stops the parcels from springing open and spilling their filling in the hot basket.
Mist with oil
Lightly spray each roll all over with oil so the wrapper blisters into a crisp, crackly shell. An even mist is the secret to a fried-like crunch without any deep frying.
Air-fry till crisp
Set the rolls seam-side down and air-fry at 190°C for 12 min, turning once, until golden and crisp all over. Serve hot with your favourite dip for dunking.
