Ingredients
- Button mushrooms12 large
- Paneer (crumbled)150 g
- Cheese (grated)2 tbsp
- Garlic & coriander1 tbsp
- Chaat masala1 tsp
- Butter (melted)1 tbsp
Method
Prep the caps
Wipe the mushrooms clean with a dry cloth and gently twist out the stems to make a hollow cup. Finely chop the stems to fold into the stuffing later, so nothing goes to waste and the cups sit steady.
Mix the filling
Combine the crumbled paneer, grated cheese, chopped garlic, coriander, chopped stems, chaat masala and salt into a moist stuffing. Press a spoonful together to check it holds, so it does not fall out while cooking.
Stuff generously
Spoon the paneer mixture into each cap, mounding it a little above the rim. A small extra dome browns nicely and gives a golden, cheesy crown once it melts in the heat.
Brush and arrange
Brush the mushroom bases with melted butter and set them upright in a single layer in the basket. Spacing them out stops them steaming into each other, so they roast rather than turn watery.
Air-fry till tender
Air-fry at 180°C for 12 min until the mushrooms are tender and the paneer top is golden and bubbling. Finish with a pinch of chaat masala for a tangy lift and serve warm straight from the basket.
