Ingredients
- bread2 slices (thick)
- mushroom200 g (sliced)
- garlic2 cloves (minced)
- butter2 tbsp
- cheese4 slices
- black pepper1/4 tsp
- mixed herbs1/2 tsp
Method
Cook the mushrooms
Toss the sliced mushrooms with the garlic, half the butter, black pepper and salt. Spread them in the basket and air fry at 190°C for 6 min until softened and lightly browned. Cooking them first drives off their water so the toast stays crisp.
Butter and top the bread
Spread the remaining butter on one side of each bread slice. Place them butter-side down and pile the cooked mushrooms on top. The buttered base crisps against the basket while the mushrooms warm through above.
Add the cheese
Sprinkle the mixed herbs over the mushrooms, then cover each slice with 2 cheese slices, right to the edges. Taking the cheese to the very edge helps it melt over the sides and seal the topping in place.
Melt and serve
Air fry the open sandwiches at 190°C for 5 min until the cheese is fully melted and the bread edges are golden and crisp. Serve hot and open-faced so the base keeps its crunch instead of steaming under a lid.
