Ingredients
- Black beans, boiled or canned1.5 cups
- Corn tortillas10
- Shredded pepper jack1 cup
- Smoked paprika1 tsp
- Lime juice1 tbsp
- Oil sprayfor brushing
Method
Mash the beans
Roughly mash the black beans with the smoked paprika and a splash of lime, leaving some whole for texture. A coarse mash grips the tortilla and holds together far better than a fully smooth, wet puree.
Add the cheese
Fold the shredded pepper jack into the warm beans so it just starts to soften. As it melts the cheese works like glue, binding the filling and keeping each taquito tightly sealed.
Warm and roll
Heat the tortillas briefly until they are soft and bendy, then spoon a line of filling along one edge and roll up tightly. Set each roll seam-side down so it cannot unravel before cooking.
Brush with oil
Mist the rolls all over with a thin layer of oil for an even, golden crunch. Arrange them in a single layer with a small gap between each so the hot air can flow all the way around.
Air-fry to crunch
Air-fry at 200°C for 11 min, turning once, until they are deeply golden and shatter-crisp from end to end. Let them cool for a minute so the shells firm up before serving.
