Ingredients
- Bhajani / mixed flour1.5 cups
- Onion, finely chopped1 large
- Coriander and green chillies1/4 cup + 2
- Turmeric and red chilli powder1/2 tsp each
- Oil for brushing1 tbsp
Method
Bind the dough
Combine the mixed flour with chopped onion, coriander, green chillies, turmeric, chilli powder and salt. Add warm water gradually and knead into a soft, pliable dough.
Pat into discs
Pinch off small balls and pat each into a thin round on a greased sheet of parchment using wet fingers. Poke a small hole in the centre of each so they cook through evenly.
Oil and preheat
Brush both sides of the discs lightly with oil and preheat the air fryer. Transfer them onto the basket on the parchment for easy handling.
First crisp
Air-fry the bites until the bottoms set and start to colour, about half the total time, then peel them off the parchment. Flip them so the second side gets direct heat.
Finish crisping
Air-fry at 180C for 13 minutes total, turning once, until both faces are speckled brown and crisp at the edges. Serve hot with a knob of white butter or yogurt.
