Ingredients
- fish350 g
- potato2 medium
- onion1 small
- ginger1 inch
- green chilli2
- egg1
- breadcrumbs1 cup
Method
Flake the fish
Steam the fish until it turns opaque, then flake it fine and pick out every bone with your fingers. Going slowly here matters, as one missed bone can spoil an otherwise lovely chop, and fine flakes bind more smoothly.
Season
Fry the chopped onion, ginger and green chilli until soft and golden. Mix them through the fish and mashed potato and season well. Cooking off the raw onion first keeps the mix dry and sweet rather than sharp and wet.
Shape
Roll the mix into small logs or round croquettes, pressing firmly as you go. A tightly packed shape holds together in the basket, while loose ones tend to crack and fall apart while cooking.
Coat
Dip each piece in beaten egg, then roll in breadcrumbs to cover it evenly, and mist with a little oil. The egg helps the crumbs stick, and that crumb shell is what fries up crisp while sealing the soft filling inside.
Air fry
Air fry at 190°C for 12 min, turning once, until deep golden and crisp all over and piping hot right through the centre. The even browning tells you the crust has set and the filling is heated through.
