Ingredients
- Grated paneer1 cup
- Boiled mashed potato1 cup
- Cornflour3 tbsp
- Chopped cashews and raisins3 tbsp
- Cardamom powder1/2 tsp
- Saltto taste
Method
Make the dough
Mash the paneer and potato together with cornflour, cardamom and salt until completely smooth and lump-free. A smooth dough gives the koftas their signature soft, melt-in-mouth body.
Stuff the centres
Flatten a portion of dough on your palm, place a pinch of chopped cashews and raisins in the middle, then seal it into a ball. Make sure the filling is fully enclosed so it does not leak during cooking.
Coat lightly
Roll each stuffed ball in a thin dusting of cornflour to give the surface a delicate crust. Tap off the excess so it browns evenly rather than turning patchy.
Oil and load
Spray the koftas all over with oil and set them in the basket with gaps between each one. The light oil film is what turns the cornflour shell crisp and golden.
Air-fry gently
Air-fry at 185C for 12 minutes, rolling them once midway so all sides firm up. Serve warm in your favourite makhani gravy once the shells are set and lightly golden.
