Ingredients
- Frozen breaded mozzarella sticks10 pieces
- Olive oil spray1 tsp
- Dried oregano1/4 tsp
- Grated parmesan1 tbsp
- Marinara dip1/2 cup
Method
Keep them frozen
Do not thaw the sticks, because cooking them solid-frozen is what stops the cheese leaking out before the coating sets. Take them straight from the freezer to the basket so the crust has time to firm up first.
Mist and dust
Lay the sticks on a plate and give them a quick mist of olive oil on all sides. Sprinkle over the oregano and grated parmesan so the coating crisps up with an extra savoury, cheesy layer of flavour as it browns.
Space them out
Place the sticks in the basket without letting them touch so hot air can circulate around each one. Sticks that touch fuse together as the cheese warms and then tear apart when you try to pull them off each other.
Air-fry briefly and hot
Air-fry at 190°C for 9 min, turning them gently once at the 6-minute mark. Pull them out the moment the crust is golden and the cheese just begins to bulge, then rest for 1 minute before serving with warm marinara.
