Ingredients
- Sweet corn kernels2 cups
- Butter3 tbsp
- Garlic, minced2 tsp
- Mixed dried herbs1 tsp
- Black pepper1/2 tsp
Method
Melt the herb butter
Melt the butter gently with the minced garlic and dried herbs over low heat until it smells fragrant. Keep the heat low so the garlic softens without browning, because browned garlic turns bitter and spoils the sweet flavour of the corn.
Coat the corn
Toss the sweet corn kernels in most of the warm herb butter until every kernel glistens. Hold back a spoonful of butter to drizzle at the end, so the finished corn tastes fresh and buttery rather than dull and dry.
Spread in basket
Tip the buttered corn into a foil-lined air-fryer tray and spread it in one even layer. The foil catches the melting butter so it bastes the kernels instead of dripping away, keeping them plump and juicy.
Air-fry and finish
Air-fry at 185C for 12 min, shaking the tray once so the kernels warm and lightly brown all over. Drizzle the reserved herb butter over the hot corn and crack black pepper on top just before serving.
