Ingredients
- Chicken wings700 g
- Honey4 tbsp
- Soy sauce2 tbsp
- Garlic4 cloves
- Baking powder1 tbsp
- Rice vinegar1 tbsp
Method
Prep and dry
Pat the wings bone-dry and toss with baking powder and a pinch of salt. This draws out surface moisture so the skin crackles before you glaze it.
Crisp them bare
Air-fry the plain wings first so the skin sets firm. Glazing too early would scorch the sugars, so the first cook is all about building texture.
Simmer the glaze
Warm the honey, soy sauce, minced garlic and rice vinegar in a small pan until it thickens to a syrup. Cook it just until it coats the back of a spoon so it clings without burning.
Toss to coat
Tip the crisp wings into the warm glaze and turn them until every piece glistens. The hot wings drink up the syrup and form a tacky, glossy shell.
Air-fry to set the glaze
Return the glazed wings and air-fry at 200C for 4 minutes to caramelize the coating into a sticky lacquer. Watch closely near the end since honey darkens fast at high heat. The chicken is done when it is opaque all the way through with no pink at the centre.
