Ingredients
- Chicken breast cubes300 g
- Fresh cream4 tbsp
- Grated cheese2 tbsp
- Green cardamom powder0.5 tsp
- White pepper0.5 tsp
- Ginger-garlic paste1 tbsp
Method
Whip the malai marinade
Beat the fresh cream with grated cheese, cardamom powder, white pepper, ginger-garlic paste and a little salt until thick and even. The cheese melts into the marinade and gives the bites their luxurious clinging coat.
Coat the chicken
Fold the chicken cubes through the cream mixture until every piece is heavily blanketed in white. Cover and chill for at least forty minutes so the cardamom and pepper settle deep into the meat.
Thread or space them
Either thread the cubes onto short skewers or simply space them apart on the basket tray. Keeping gaps lets the hot air set the cream coat without it sliding off.
Light oil mist
Give the tops a very light mist of oil to encourage a faint blush of colour while keeping the pale malai look. Avoid drowning them in oil or they will lose that delicate creamy finish.
Air-fry low and slow
Air-fry at 180C for 14 to 16 minutes, turning once gently halfway through. The bites are done when they are opaque all the way through with no pink at the centre, with lightly golden edges.
