Ingredients
- Raw prawns, peeled250 g
- White sandwich bread4 slices
- Egg white1
- Sesame seeds4 tbsp
- Spring onion2
- Sesame oil1 tsp
Method
Blitz the topping
Blend the prawns, egg white, chopped spring onion and sesame oil into a smooth, sticky paste. The egg white binds the topping so it grips the bread instead of sliding off.
Spread thickly
Spread the prawn paste evenly over each slice of bread right to the edges. A generous, even layer ensures the topping cooks through and stays attached as it firms up.
Coat in sesame
Press the pasted side firmly into a plate of sesame seeds so they stick in a dense layer. Cut each slice into four triangles for the classic shape and quicker cooking.
Oil and arrange
Lightly brush the bread underside with oil and place the triangles sesame-side up in the basket. Keep them in a single layer so each one toasts evenly.
Air-fry until crisp
Cook at 190C for 10 minutes until the sesame coating is toasted golden and the prawn layer is set and opaque. Serve hot with sweet chilli sauce for dipping.
