Ingredients
- Sea scallops300 g
- Butter, melted3 tbsp
- Garlic, minced4 cloves
- Fresh parsley, chopped2 tbsp
- Lemon juice1 tbsp
- Salt & white pepper1 tsp
Method
Dry the scallops
Blot the scallops very dry and pull off the small tough side muscle if it is still attached. A dry surface is essential for a proper golden sear instead of pale steaming.
Make garlic butter
Stir the melted butter with the minced garlic, lemon juice, salt and white pepper. Keep some aside to spoon over the scallops at the end for a fresh burst of garlic.
Coat lightly
Brush each scallop with the garlic butter on all sides. Avoid drenching them, because sitting in liquid makes them poach and go soft rather than brown nicely.
Arrange with space
Place the scallops flat in a single layer without touching so heat circulates all around them. Crowding leads to uneven cooking and a rubbery, chewy bite.
Air-fry gently
Air-fry at 195C for 7 min, flipping once at the midpoint, until the scallops turn opaque and lightly golden. Finish with the reserved garlic butter and a sprinkle of parsley.
