Ingredients
- Boneless chicken breast300 g, cubed
- Greek yogurt2 tbsp
- Garlic paste1 tsp
- Dried oregano1 tsp
- Lemon juice1 tbsp
- Olive oil1 tsp
Method
Mix the marinade
Whisk the Greek yogurt, garlic paste, oregano, lemon juice and olive oil into a smooth paste. The yogurt does more than flavour; its gentle acidity tenderises the lean breast so the bites stay juicy instead of drying out in the hot air.
Coat the chicken
Fold the chicken cubes through the marinade until every piece is evenly coated. Cover the bowl and rest it in the fridge for at least 20 minutes, as that resting time lets the yogurt and lemon soak in so the flavour reaches past the surface.
Preheat and arrange
Preheat the air fryer to 200°C for a few minutes, then lay the cubes in a single layer with space around each one. A hot basket sears the surface fast, and the gaps stop the pieces steaming so they brown rather than turning pale.
Air-fry the bites
Air-fry at 200°C for 14 min, shaking the basket halfway through so every side catches some colour. The bites are done when the juices run clear with no pink in the middle and the edges look lightly charred.
