Ingredients
- Mutton (small cubes)400 g
- Hung curd1/3 cup
- Red chilli & pepper powder2 tsp each
- Cornflour2 tbsp
- Ginger-garlic paste1.5 tbsp
- Curry leaves1 sprig
Method
Spiced curd marinade
Mix the mutton cubes with hung curd, chilli, pepper, ginger-garlic paste and salt. Marinate for at least ninety minutes so the small cubes turn tender and soak up the heat right to the middle.
Dust with cornflour
Just before cooking, toss the marinated cubes in cornflour. This thin layer crisps up beautifully in the hot air and locks the spicy coating onto the meat instead of letting it slide off.
Add aromatics
Scatter torn curry leaves through the mix for a fragrant South-Indian style edge. Drizzle over a teaspoon of oil so the surface browns and the leaves crisp rather than staying limp.
Spread out
Arrange the cubes in a single layer with gaps so hot air reaches every side. Crowding traps steam and makes them soft, so give each piece room to crisp and colour properly.
Air-fry till crisp
Air-fry at 200°C for 15 min, shaking the basket twice, until the bites are deeply browned and crisp at the edges. They are done when cooked through with no pink in the centre.
